What do you think WordPress can do without all its huge no.of plugins ? If it just WordPress alone, will you use it ?
It will still be great. Especially because it now has a block editor. That give the freedom to build a lot things.
You can always use simple core WordPress for blogging. No strings attached.
I completely forgot about the block editor. Gutenberg is pretty advanced now. Lot of different types of blocks are available. And they are rich with features as well.
WordPress on its own is fundamentally useless unless you are looking for a simple blogging platform with no frills or even a decent comments system. Most sites have online stores or a paywall at the very least.

I am tempted to try and use WordPress alone for a blog project. To see how it goes. A lot of headache is gone because we don't have to wait for plugin updates.

You are right on this one. No spam control in default system as far as I know. But can we put it on moderation ?

You can build HTML template style sites with core WordPress alone. You can mimic almost every template using those blocks. But I will have to check whether WordPress allow custom.css in core these days.
